Mars Rocky Road

I used to struggle with rocky road before perfecting this recipe, I would always have issues with it cracking or crumbling and looking an absolute MESS. The slices were never even because the knife would have a mind of its own, it was carnage. But this recipe is pretty much foolproof and produces the yummiest rocky road… or so I’ve been told. Ok full disclosure I do not like rocky road. But I've always had great feedback!

This rocky road is easy to make and slices beautifully, and you can switch the add ins from Mars bars to any chocolate or biscuits you like. You can remove the marshmallows if you like, just use extra digestives and chocolate pieces!

INGREDIENTS

Rocky road:

  • 300g milk chocolate
  • 200g dark chocolate
  • 250g salted butter
  • 250g condensed milk
  • 300g chopped mars bars
  • 100g digestives
  • 100g mini marshmallows

Topping:

  • 250g milk chocolate
  • 150g dark chocolate
  • More Mars bars
  • Chocolate chunks

METHOD

  1. Melt milk chocolate, dark chocolate, and salted butter in a microwave safe bowl in short bursts until smooth
  2. Stir in the condensed milk until combined, then allow the mixture to cool for 5-10 minutes so that it doesn’t melt the mars bars
  3. Add your chopped Mars bars, mini marshmallows, and digestives to a large bowl
  4. Once the chocolate mix has cooled, pour that onto the chocolate and marshmallows and stir well until everything is nicely coated
  5. Tip the mixture into a lined tin and refrigerate for a minimum of 4 hours (I use an 11x7” tin but 9x9” works well and is more readily available)
  6. Melt the chocolate for topping and pour onto the set rocky road, you can decorate however you like but I like to use thin slices of Mars bars and chocolate chunks
  7. I chop mine into 10 chunky portions, you can go smaller if you like!

NOTES
Store in an airtight container and they should keep for at least 10 days!
