Hi gang!! It’s been a while since I shared a recipe, so I thought I’d pop a new one on here… and it’s a BEAUTY, this one is for the biscoff lovers
the base is a biscoff coated krispie treat, topped with a layer of gooey caramel, and finished with more biscoffy chocolatey goodness. I won’t keep you scrolling any longer, here’s the recipe! (Notes and tips at the end)
INGREDIENTS
Base:
200g white chocolate
175g biscoff spread
150g Rice Krispies
Caramel:
1 tin condensed milk
200g salted butter
100g golden syrup
75g granulated sugar
Topping:
300g white chocolate
100g biscoff spread
biscoff biscuits, I used both the regular ones and the filled ones
METHOD
- Prepare your tin, I used both an 11x7” tin would be exactly the same. I spray with cake release spray and line with greaseproof paper
- Melt white chocolate and biscoff spread, stir that mixture through the Rice Krispies until they’re fully coated and spread them into your tin
- Add all the caramel ingredients to a pan (either a heavy based silver saucepan or a non stick like the Asda scoville range will be perfect, I’d avoid using a dark colour pan)
- Over a medium heat, stir the mix constantly with a silicone spatula until all the ingredients are nicely melted and combined
- Turn the heat up to medium high and continue stirring for approx 8-10 minutes although this varies depending on your hob etc… you’re looking for a deep golden colour!
- Pour the caramel over the krispie base and pop in the fridge for a couple of hours
- Once set, melt your white chocolate and Biscoff spread for the topping and pour this over the set caramel before adding broken biscuits. I usually let this set at room temperature for a couple of hours and pop in the fridge for 10-15 if needed to firm up at the end, you don’t want it too firm!
- Slice and enjoy!

NOTES
Caramel can be tricky, although I find this recipe pretty foolproof. If you find it burning or getting hotter than you’d like, just remove it from the heat and stir for a minute, turn the heat down slightly, and go back to the heat.
I chop mine into 10 to sell, but these are pretty big portions… you can chop to any size you like!
